    Rhubarb Pineapple Pie

    List of Ingredients




    1-1/2 C sugar
    1/4 C all-purpose flour
    3 C rhubarb, sliced thin
    14 oz crushed pineapple, well drained
    1/2 t almond extract
    Pastry for a 2 crust pie
    1 T granulated sugar


    Recipe



    In a large bowl, combine sugar and flour. Stir. Add rhubarb,
    pineapple and almond extract. Stir.
    Put into pie shell. Cover with top crust and crimp edges and cut slits in top for steam to escape.
    Sprinkle 1 tablespoon sugar over top.
    Bake at 350 F about 50-60 minutes until browned and rhubarb is cooked.
