    List of Ingredients




    ¾ C all-purpose flour
    ¼ t salt
    3 T butter, margarine, shortening, chilled.
    ¼ C low-fat cottage cheese
    2 or 3 T ice water

    Recipe



    Sift together the flour and salt 3 times. Place the sifted mixture in the work bowl of a food processor fitted with a metal blade. Cut the chilled butter, margarine, or shortening into small bits and add with the cottage cheese to the processor. Process, using brief on-off pulses just until the dough comes together. Remove the dough from the processor and pate it into a small disk. Wrap the disk in plastic wrap and refrigerate for 30 minutes before rolling out. Use the dough as directed in individual recipes.

    If you are making the dough by hand, in a bowl cut the chilled butter, margarine, or shorening into the sifted flour mixture with a pastry blender or 2 knives until crumbly. Dribble the ice water into the mixture, 1 tablespoon at a time, and, using your hands, mix lightly just until the dough comes together. Knead the dough gently, pat into a small disk and refrigerate for 30 minutes.
