    Sour Cream Pastry

    List of Ingredients




    2 C sifted flour
    1/2 t salt
    1/2 t baking powder
    1/2 C chilled vegetable shortening
    1/4 C sour cream
    1 egg, lightly beaten

    Recipe



    Sift flour with salt and baking powder, then cut in shortening until mixture resembles coarse meal.
    Blend sour cream and egg, pour all at once into flour, and mix briskly with a fork until pastry just holds together.
    Wrap in wax paper and chill. Divide into 2 balls, then roll 1 at a time on lightly floured surface, 3 inches larger in diameter than the piepan. Put in pie pan pressing out any bubbles. Fill, brush rim with water and top with second crust. Crimp and bake according to filling recipe.
    Makes 1 double 8 - 9 inch crust
