Sweet potatoes - 1 for every 2 people
Butter
Large Marshmallows

Prick sweet potatoes, place on foil-lined cookie sheet or jelly roll pan and bake in 350 degree oven until fork pierces easily....about an hour, give or take.  Remove from oven and let cool a bit.  Cut in half and holding with a hotpad, use a teaspoon to scoop the pulp into a greased casserole dish. Press down with fork to flatten.   As soon as bottom is covered, sprinkle lightly with salt and dot with butter.  Continue  with rest of potatoes, flattening, salting and buttering each layer.  (Can be refrigerated at this point).  On day of serving, heat, covered, in 350 degree oven until thoroughly heated through.  About 15 min before serving, cover top with marshmallows, place in oven uncovered.  The marshmallows will melt, run together, and have a light brown crispy crust on top.  Place casserole in basket and put on buffet table or pass family style.
