Lew's Potato Pancakes

2 Lg. Potatoes, peeled
1 Qt Water
1 t Vinegar
1 t Salt
1 Egg
1 Heaping T Flour
S & P to taste
1/2 Medium Onion
Oil to fry
Recipe
Soak potatoes in water with vinegar and salt 15 minutes.
Grate the potatoes. Put in a sieve and squeeze out the extra moisture.
Fine grate one-half a medium onion and mix with potatoes, with 1 full tbs flour, 1 egg. Mix well. Season with salt and pepper to taste.
In a hot frying pan, add one-half inch oil. Add 1 full tbs of mixture at a time. Brown well on both sides.
Serve with applesauce or sour cream.
