    Mashed Potatoes w/Green Onions

    List of Ingredients

    5 1/2 # Russet Potatoes,peeled, cut into 2" pieces
    2 C hot Milk

    1/4 C Butter
    2 bunches Green Onions, chopped

    Recipe

    Cook potatoes in a large pot until just tender. Drain and transfer to bowl. Beat potatoes until smooth, with an electric mixer, adding milk gradually. Season with salt and pepper.
    Melt butter in skillet. Add onions and cook until tender, about 3 minutes. Stir onions into potatoes.
    This can be prepared up to 2 hours prior to serving. Cover and let stand at room temperature. To serve, stir over low heat in skillet.
    Serves 12.
