1 C leftover Mashed Potatoes, seasoned and buttered
3/4 C Flour
1 Egg
A little Milk for moistening,opt.
Minced Spring Onions, optional
Shortening or Oil
Recipe
To leftover mashed potatoes add flour and egg. Mix together and gradually add a little milk for moistening. The mixture should be able to fall off the spoon easily without being too runny. Add minced onions, if desired. Grease a skillet and dip potatoes out by tablespoonsful. Fry until golden brown and crispy.
