1/2 - 1 C Vegetable Oil
1 small Onion, coarsely grated
3 russet Potatoes, peeled and coarsely grated
3 T Flour
2 Eggs, beaten
1/4 t Salt
Dash Pepper
Recipe
Heat about 1/3 C of oil in a large cast-iron skillet
over medium-high heat until very hot. Mix grated onion
and potatoes with flour, eggs, salt and pepper. Drop
1/4 cup of the potato mixture into the oil and flatten
with the back of a spatula. Fry until crisp and brown
on both sides about 6 minutes per side, turning once
or twice. Repeat until all of the potato mixture is
fried, adding more oil as needed.
Makes 12 latkes
