    Balsamic Chicken Thighs

    List of Ingredients




    1/3 C balsamic vinegar
    1/4 C + 1 T olive oil
    2 large garlic cloves, minced
    1 t Kosher salt
    1/2 t cracked peppercorns, or to taste
    6 large chicken thighs, skinned and fat removed
    1 large red onion, thickly sliced and separated into rings
    Sprigs of parsley for garnish

    Recipe



    In a large bowl, combine the vinegar, the 1/4 cup of oil, garlic, salt and peppercorns. Toss the chicken in the marinade, cover, and refrigerate overnight, or at least 4 hours. Turn the chicken often.
    In a large, heavy skillet over high heat, heat the remaining tablespoon of oil. Place the chicken in the skillet, reserving the marinade, and saute 10 minutes to a deep golden brown. Reduce the heat, add the reserved marinade, and the onion rings. Cover, and simmer 15 minutes more, or until the chicken is done and the sauce reduced. Garnish with parsley and serve hot.
    Makes 6 servings.
