Bare Cupboard Goulash

Recipe Introduction
I invented this recently when all I had in the pantry were the following ingredients. It came out so satisfying, that I want to make it again (on purpose). I served it with Texas Toast.
List of Ingredients
(about 2 T) Olive Oil
1 Boneless, skinless Chicken Breast, cut in 1" chunks
Small Can Mushrooms, drained
Potatoes, peeled, cut into 1" chunks
Canned Diced Tomatoes, undrained
Canned Cut Green Beans, drained
Garlic (either powder or minced from jar), to taste (I used both)
(about 2 T) Dry Onion Flakes OR Onion Powder OR Dry Onion Soup Mix OR Chopped Fresh Onion
(about 1 t) Basil, to taste
Dash Oregano, to taste
S & P, to taste
Water, as needed
Recipe
Saute chicken in olive oil in a Dutch oven. Add mushrooms and saute a bit more. Add remaining ingredients, reduce heat, cover and simmer until potatoes and chicken are cooked, adding as much water as needed.
Serves 2.
