    This is one of those recipes without measurements. Wing it.
    I've been making this for years and it's one of my favorite dishes to make for company.
    Because this does require some last minute preparation, make easy accompaniments such as double baked or make-ahead mashed potatoes, a salad and bread, beforehand.

    List of Ingredients




    Egg
    Flour
    Garlic Powder
    Salt & Pepper
    Butter (preferrably clarified)
    Boneless Chicken Breasts
    Canned Tomatoes (diced or whole)
    Canned Artichoke Hearts
    Oregano
    Fresh Spinach
    Parmesan or Romano Cheese

    Recipe



    Beat egg in shallow dish or pie pan (add a bit of water if necessary).
    Season flour with garlic powder and S & P on a paper plate or pie pan.
    Pound chicken breasts slightly to tenderize.
    Dredge breasts in seasoned flour, then egg, then seasoned flour.
    Saute in butter in a large skillet until lightly golden.
    Add tomatoes (cut in half, if whole) with their juice, drained artichoke hearts, cut in half, garlic powder and a healthy pinch of oregano. Simmer until chicken is cooked through. Remove to large platter and keep warm.
    Add fresh spinach to pan and cook until just wilted, about 2 minutes. Surround chicken with spinach on platter.
    Sprinkle with cheese and serve.
