Chicken Fajita Mix & Recipe
List of Ingredients
Fajita Seasoning Mix:
2 tsp. paprika
2 tsp. salt
2 tsp. onion powder or flakes
2 tsp. garlic powder
1 tsp. cayenne pepper (optional; makes it very spicy)
1.5 tsp. freshly ground pepper
1 tsp. dried thyme
1 tsp. crumbled oregano
2 tsp. ground cumin
1.5 tsp. chili powder
To prepare fajitas:
4 tsp Fajita Seasoning Mix
1 pound boneless, skinless chicken breasts, cut into thin strips
3 tbsp. olive oil
1/4 c. fresh lemon or lime juice (or to taste)
1 medium onion, sliced (optional)
2 small green peppers, sliced (optional)
1 small red pepper, sliced (optional)Recipe
Combine Seasoning Mix ingredients and keep in an air tight container until ready for use or give as a gift with fajita recipe.
Toss chicken pieces in spice mixture and set aside (you may want to adjust the amount of spice mix to suit your tastes). In a saucepan, cook onions and peppers in the olive oil on high heat for 2-3 minutes. Add chicken and cook until done, 5-10 minutes. Add lime juice and mix well. Simmer while preparing condiments and tortillas.
Warm tortillas in the oven (10 minutes on 350F). You can add tomatoes, guacamole, sour cream, lettuce, or whatever you like. Place the chicken and condiments in the middle of the tortilla and roll up like a burrito.
