Chicken Florentine

3 oz. boneless Chicken Breast
1 C frozen Spinach
2 C fresh Mushrooms
1/2 C chopped Onion
1/4 t Nutmeg
1/4 t Black Pepper
1T low fat or nonfat Parmesan Cheese
1 t Olive oil
Recipe
Cook spinach according to package directions. Drain well. Put drained spinach between paper towels and remove excess moisture by pressing with spatula.
Chop spinach, set aside. Wash and slice mushrooms; chop onions and set aside.
Place chicken breast and onions in a medium sized saucepan. Add enough water to cover and cook covered over medium low heat until just white throughout; about 15-18 minutes. In a non-stick pan, sauté mushrooms in olive oil until tender, about five minutes. Put spinach on bottom of broil-safe dish. Sprinkle with nutmeg and pepper. Arrange chicken in single layer over spinach. Top with mushrooms.
Sprinkle with cheese. Broil for one or two minutes until cheese melts.
