4-5 chicken breast halves
3 T flour
1/4 t onion powder
3 T oil
1 can (16 oz.) tomatoes
2 T Worcestershire sauce
1/4 t sugar
1 pkg. frozen artichoke hearts (6 oz. jar)
4 oz. fresh mushrooms, trimmed and sliced
Recipe
Discard skin from chicken. Pound breasts slightly. Combine flour & onion powder, coat chicken with flour, brown in hot oil. Combine tomatoes, W-sauce and sugar, breaking up tomatoes. Add to chicken. Cover and cook 20 minutes.
Add artichokes and mushrooms, simmer 10 minutes or until chicken and artichokes are tender. Remove chicken to platter. Simmer sauce 2-3 minutes, until slightly thickened (use corn starch & water). Spoon over chicken.
Serve with rice.
You can serve the sauce separately as some might not want it on the chicken. This is low in cholesterol.
