Chicken w/ 30 Cloves of Garlic

List of Ingredients
1/4 C Olive oil
2 T butter or margarine
30 cloves peeled garlic
1- 4 to 5 lb. chicken cutup
1 10 3/4 oz. can chicken broth
1/2 C dry white wine (chablis)
1/2 C water
1/4 t dry thyme leaves
1 C long grain white rice
3 plum (roma) tomatoes coursely chopped
1/2 C chopped green onions
Recipe
In 6 quart dutch oven, heat half of oil & butter, saute' garlic cloves until golden. Remove to plate. Saute' chicken, several pieces at a time.
Add remaining oil & butter as needed.
Return all of chicken to dutch oven & add broth, wine, water & thyme.
Cover, heat to boiling, reduce heat & simmer 35 minutes.
Push chicken aside or remove some pieces and sprinkle rice into liquid.
Return chicken. Sprinkle garlic cloves over mixture, cover & return to a boil. Reduce heat & simmer until liquid is absorbed & rice is done. (approx. 30 minutes).
Top chicken with tomatoes & chopped green onions. Serve from dutch oven.
