Harpers Perfect Roast Chicken
List of Ingredients
4 # Whole Chicken, washed and patted dry
1 - 2 cloves Garlic
Salt and Pepper
Soft Butter
Celery stalk with leaves
1/2 medium Onion
Seasoned Salt
Recipe
Heavily season cavity of chicken with Salt and Pepper. Insert Garlic, Onion and Celery. Tie legs together or truss.
Slather chicken with soft Butter, season with Seasoned Salt and place BREAST SIDE DOWN on a rack in a roasting pan.
Open roast chicken in hot oven (400-450*) until it starts to brown, about an hour. Cover with a foil tent, lower heat to 350* and continue roasting until juices run clear from thigh, about 1 hour more. Let rest a few minutes before serving. Place on platter, breast side UP, remove onion and celery and carve.
Note: This makes wonderful pan juices to make gravy with, if desired.
