Lower Fat Chicken Alfredo*
List of Ingredients
1 T Olive oil
1 # chicken breast meat cubed
3 green onions w/tops
Garlic to taste
1 T cornstarch
1 C milk
1/2 C grated Romano cheese
12 oz fresh mushrooms sliced
14 oz can tomatoes drained and diced
Basil to taste
Pasta or Rice
Recipe
In large skillet cook chicken, green onion and garlic;
saute until chicken is no longer pink. Stir cornstarch into 2T milk. Add to skillet with remaining milk, Romano cheese, mushrooms, tomatoes. Bring to a boil. Reduce heat and simmer
5-10 minutes until sauce is slightly thick; stir in basil. Meanwhile, cook and drain pasta.
Serve over pasta or rice of choice.
This is absolutely delicious and as easy as could be!
