Mom's Chicken-in-the-Oven*
List of Ingredients
2 1/2-3 # Chicken parts
1 Potato per person, quartered or larger
1 (28 oz) Can Italian Plum Tomatoes
1 Onion, cut in wedges
1-2 Cloves Garlic, sliced or chopped OR
Garlic Powder, to taste
1 Can Mushrooms, drained
Oregano, to taste
Salt & Pepper to taste
Olive Oil
Recipe
Arrange Chicken in baking pan; add Potatoes, Onions, Mushrooms and squeezed Tomatoes over the top. Season with Oregano, Garlic, Salt and Pepper to taste.
Drizzle olive oil over all.
Cover with foil and bake at 350* for at least
two hours, basting occasionally. In the last half hour
or so remove the foil to let much of the moisture evaporate, and to allow some of the top to become a bit crispy.
Peas are a natural with this yummy Italian dish.
