4 skinless, boneless Chicken breast halves
2 T Olive Oil
4 cloves Garlic, minced
1 T Capers
1/2 C pitted black Olives, sliced (measure before slicing)
1/2 C pitted or stuffed green Olives, sliced (measure before slicing)
Salt and freshly ground Pepper
1 t Oregano
1 C dry white Wine
1 can (16 oz.) Plum Tomatoes, including juice
Recipe
In a large skillet over moderate heat, heat the oil. When it's hot, cook the chicken until both sides are starting to turn brown. Drain the oil and add the garlic, capers, olives, salt and pepper, and oregano. Mix well and add wine.
Cook for 5 minutes more, and add tomatoes. Cook another 10 minutes, without covering pan. Check that chicken tests done.
Serves 4.
