Quick Chicken Marsala
List of Ingredients
3 Boneless Chicken Breasts, cut in 1" chunks
1/2 t Salt
Pepper to taste
Flour for dredging
7 T Butter
1 Medium Onion, thinly sliced
2 1/2 C Sliced Mushrooms
1/2 C Marsala Recipe
Season chicken with S & P, then dust in flour. Brown in 4 T butter in skillet. Remove meat. Add onions and mushrooms to skillet along with the remaining 3 T butter. Cook 5 minutes or until tender. Return chicken to skillet; add Marsala and cook over high heat 1 minute.
Good with steamed rice, garnished with snipped scallions.
