Raspberry Chicken
List of Ingredients
4 whole skinless chicken breasts
2 T. flour
1 1/2 T. butter
1 T vegetable oil
6 T. raspberry vinegar
1/2-3/4 c. chicken broth
1/1 c. evaporated milk
Fresh raspberries to garnish
Recipe
Coat chicken with flour. Melt butter in large skillet; add oil.
Brown chicken, turning once. Add vinegar and broth to skillet; stir
over low heat until combined. Simmer, uncovered, until chicken is
done. Remove chicken to serving platter and keep warm. Add
evaporated milk to skillet; boil until slightly thickened, stirring
occasionally. Pour sauce over chicken; garnish with raspberries.
Serve at once. This is also tasty with pork chops or fresh boneless
pork.
