    Simple Chicken Marsala

    List of Ingredients




    Salt
    Freshly ground black pepper to taste
    Dried oregano
    4 boneless skinless chicken breasts
    3 T butter
    1/2 C Marsala wine (Or Dry Vermouth for a slightly different flavor)
    Optional: mushrooms, sliced, quartered or whole
    depending on size

    Recipe



    Season chicken breasts. Heat butter in a heavy skillet. Saute chicken breasts about 4 min. a side, removing from pan when done and keeping them hot. Here is where you saute the mushrooms, if desired. (You will need to add more butter if you use them.) Remove when done, and deglaze the pan with the Marsala, reducing it to sort of a syrup.
    Then put the optional mushrooms back into the sauce and pour it over the chicken to serve.
    Buttered orzo topped with Parmesan is good served with this.
