    6 Boneless, skinless Chicken Breasts
    Salt & Pepper
    6 oz  Cream Cheese, softened
    2 Shallots or 1/2 small Onion, diced
    4 large Mushrooms, diced
    4 cloves Garlic, minced
    3 oz Bacon Bits

    Recipe



    Wash and pat chicken breasts dry with paper towels.then pound them flat between two sheets of waxed paper. Season with small amount of S & P. Saute veggies in a small amout of butter. Let cool slightly, then fold into cream cheese. 
    Spread about 1 T cream cheese mixture on each chicken breast. Fold up the sides of the chicken breasts, then tie or use toothpicks to keep from falling apart. Place seam side down in greased casserole dish. Bake uncovered @ 350F 45 minutes or until chicken reaches 165 degrees internally. Sprinkle bacon bits on top of the chicken breast about 10 minutes before removing from oven.
