    Turkey Cacciatore

    List of Ingredients




    2 Tbs. olive oil
    1 medium onion, diced
    1/4 lb. mushrooms, sliced
    1 green pepper, sliced length wise
    3 cloves garlic, minced
    2 cups tomatoes, diced
    1 bay leaf
    1/2 tsp. rosemary
    1/4 cup white wine
    1/4 cup chicken broth
    1/2 cup black olives, cut in half (optional)
    1 lb. turkey breast, boneless and cut into pieces
    Flour
    Olive oil

    Recipe



    Heat 2 Tbs. oil in a dutch oven type pan. Add the onion, mushrooms,
    green pepper and garlic. Cook until just soft. Add the tomatoes, bay
    leaf, rosemary, wine, olives, and broth. Simmer for 30 minutes.
    Heat oil in a heavy skillet. Dredge the turkey pieces in flour, and cook
    until well browned. Place in the dutch oven with the vegetables and
    simmer partially covered, for 25 minutes (or until turkey tests done,
    not pink in the middle).
    This is delicious served warm over angel hair pasta nests.
