Olive Salad (Insalata di Olive)

This is particularly good on submarine sandwiches.
List of Ingredients
1 C drained pimiento-stuffed green olives,
coarsely chopped
2 - 4 cloves garlic, finely chopped
2 ribs celery, finely chopped
1 T extra-virgin olive oil
2 t red wine vinegar
1/2 t grated lemon zest
1/4 t dried oregano
1/4 t hot red pepper flakes, or to taste
Salt and freshly ground pepper to taste
Recipe
Combine all ingredients in a bowl and toss to combine. Refrigerate covered for at least 2 hours, and up to 2 days before serving at room temperature.
Serves 4 to 6.
