    2 T Peanut Oil
    2 cloves Garlic, chopped
    1" length Gingerroot, peeled and minced
    1-2 Chicken Thighs, skin and bones removed and diced OR 6 oz. Small Shrimp, peeled and cleaned OR 4 oz. Surimi, chopped
    1 large bunch Scallions, chopped (white and green parts)
    1/2 # green Peas, pods removed
    4-6 Chinese Long Beans, washed and cut into 1/2-3/4" lengths
    1 bunch Bok Choy, slivered
    2 C LEFTOVER steamed Rice, returned to room temperature (do not make fresh rice for this;If you do, leave it in the fridge overnight. This is very important)
    2 Eggs, beaten
    Chopped fresh Cilantro, additional chopped Scallions (white and green parts).

    Heat wok until you can only hold your hand an inch away from the surface for no more than 6 seconds. Add the oil. As soon as shimmering rises from the surface, add the garlic and gingerroot, stir once, using extra long cooking chopsticks, and add the chicken or shrimp. Stir until the chicken is done, or the shrimp are pink. If using surimi, just add and stir once. Add scallionsk, peas and long beans. Stir for a scant minute and add bok choy. Stir with the chopstsicks until the peas and beanss are crisp-tender and very bright green. Stir in the rice and cook, stirring, for a minute, just until it's hot. Take the bowl of eggs and, whisking the mixture in the wok vigorously with the chopsticks, use your other hand to pour in the eggs, whisking all the while.
    As soon as all the egg has been whisked in, immediately remove the mixture to a platter or the plates and sprinkle with cilantro and scallions.
    Makes a main dish for 2.
    All you need to complete the meal is a bowl of wonton soup and a fresh orange afterwards.
