Tex-Mex Chunky Rice

Recipe Introduction
This is a rather hearty side-dish for a meal of tacos or enchiladas. IF there are any leftovers, it's even better on the second day.
List of Ingredients
1 6 oz. pkg Spanish Rice Mix
1 15 oz. can dark Kidney Beans
1 16 oz. can Tomatoes, undrained
1 medium Green Pepper, chopped
1 small Onion, diced
1 1/2 t Chili Powder
1 t ground Cumin
shredded Cheddar Cheese for topping
Sour Cream for topping
Recipe
In a 3-qt saucepan, combine rice mix, 2 3/4 C water, beans, tomatoes, green pepper, onion and seasonings. Bring to a boil over high heat. Reduce heat to low and simmer, uncovered, for about 20 minutes or until rice is tender and liquid is absorbed, stirring occasionally.
Top each serving with shredded cheese and sour cream.
Serves 4.
