Tomato Rice

List of Ingredients
1/4 C Olive Oil
2 T Butter or Bacon drippings
1 Large Yellow Onion, peeled & chopped
2 Cloves Garlic, peeled & chopped
2 - 3 Large Tomatoes, peeled, seeded & chopped
3 C Beef or Chicken Broth
2 C Long Grain Rice
S & P to taste
Chopped Parsley for garnish
Recipe
Heat Oil & Butter in large saucepan over moderate heat. Add Onion & Garlic and cook 5 minutes or until soft, but not browned.
Add Tomatoes, cover and simmer 15 minutes.
Add Broth and bring to boil. Stir in Rice, S&P and cover.
Reduce heat to a simmer and cook covered until the Rice is done, about 20 minutes.
Fluff with a fork, garnish with Parsley and serve.
Serves 4-6.
