4 tomatoes, sliced
1 cucumber, peeled and sliced
1 small red onion, thinly sliced
½ C olive oil
1/3 C red wine vinegar
2 T finely chopped fresh parsley
½ t dried basil
½ t salt
½ t granulated sugar
1 C crumbled feta cheese
¼ C sliced pitted ripe olives
leaf lettuce
Recipe
In large shallow glass or ceramic dish, arrange tomato, cucumber and onion slices.
In jar, combine oil, vinegar, parsley, basil, salt and sugar. Shake vigorously to mix well. Pour over vegetables; cover and marinate in refrigerator for several hours, stirring occasionally.
To serve, sprinkle feta cheese and olives over marinated vegetables and serve on leaf lettuce.
Makes 6 to 8 servings.
