Spinach Salad with Bleu Cheese Dressing
List of Ingredients
Dressing:
1 cup crumbled blue cheese, divided
3/4 cup mayonnaise
1/2 cup sour cream
1/4 cup buttermilk
2 tablespoons fresh lemon juice
1 clove garlic, minced
1 teaspoon grated onion
1 teaspoon sugar
2 tablespoons cracked black pepper
Salad:
1 Bag Fresh Spinach
1 Tart Apple, diced (Granny Smith recommended)
8-10 slices Bacon, cooked and crumbled
Pine Nuts, opt.
Recipe
Whisk together all of the dressing ingredients except for 1/4 cup of the crumbled blue cheese. Adjust the seasoning with salt or more pepper, if needed. Fold in the remaining cheese. Let the dressing rest for eight hours before using.
Prepare Spinach, by washing and drying it.
Toss it in a bowl with diced tart apple and crumbled cooked bacon. Top with a dollop of Bleu Cheese Dressing and garnish with pine nuts. Heaven!
