Tomato Artichoke Rice Salad

2 T and 1 t Lemon Juice
3/4 t finely chopped Garlic
1/4 t Salt
1/4 t ground Black Pepper
2 C chilled cooked long-grain white Rice
2 large Tomatoes, seeded and diced
2/3 C finely chopped Red Onion
2/3 (6 oz) can pitted whole Black Olives, drainedRecipe
In a large bowl, mix the reserved artichoke marinade, lemon juice, garlic, salt, and pepper. Gently mix the artichoke hearts, rice, tomatoes, onion, and olives into the bowl. Cover, and refrigerate until serving.
