    2 C diced plum Tomatoes (about 1 #)
    1/4 t Salt
    1 T fresh Lemon Juice
    2 t extra-virgin Olive Oil
    1/4 t Black Pepper
    1/8 t crushed Red Pepper
    1 Garlic clove, minced
    1/4 C chopped fresh Basil
    1/4 C finely chopped Onion
    2 T finely chopped flat-leaf or curly-leaf Parsley
    1 (16-oz) can Cannellini Beans or other white Beans, drained

    Recipe



    Place plum tomato in a colander; sprinkle with salt, and drain 1 hour.
    Combine lemon juice, oil, peppers and garlic in a large bowl, stirring well with a whisk. Add diced tomato, basil and remaining ingredients, tossing gently to coat.
    Makes 4 (1-cup) servings.

    Per serving: 118 cal., 3 g fat (0.4 g sat. fat), 5.1 g protein, 18.1 g carbo., 4.2 g fiber, 0 mg chol., 295 mg sodium.
