    6 pimiento-stuffed green olives, sliced
    6 mild Italian pickled peppers (pepperoncini), chopped
    2 scallions (spring onions), green and white parts, thinly sliced
    2 T olive oil
    1 T red wine vinegar
    Salt and freshly ground pepper to taste
    6 French rolls or hoagie buns, split horizontally
    Lettuce leaves
    24 (or more) thin slices Italian salami or pepperoni
    6 (or more) slices mozzarella or provolone cheese
    6 (or more) anchovy fillets (opt)

    Recipe



    Combine the olives, pickled peppers, scallions, olive oil, vinegar, salt, and pepper in a small bowl and toss to combine. Place lettuce leaves on the rolls and top with the salami, cheese, and optional anchovies. Divide the olive mixture between the sandwiches.
    Makes 6 sandwiches.
