Hearty Italian Sandwiches (Crockpot)

1-1/2 # lean ground beef
1-1/2 # bulk Italian sausage
2 large onions, sliced
2 large green peppers, sliced.
1 t salt
1 t pepper
1/4 t crushed red pepper flakes
8 sandwich rolls, split
Shredded Monterey Jack cheese
Recipe
Brown beef and sausage in skillet, drain. Place a third of the onions and peppers in slow cooker, top with half the meat mixture. Repeat layers of vegetables and meat, then top with remaining vegetables. Sprinkle with salt, pepper and pepper flakes. Cover and cook on low 6 hours or till vegetables are tender.
With a slotted spoon, serve about 1 C meat and vegetables on each roll.
Top with Monterey Jack cheese. Use pan juices for dipping, if desired.
