    Mushroom and Bacon Sauce

    List of Ingredients




    4oz Mushrooms, thinly sliced
    1/2 stick Butter
    4 strips Bacon, diced
    2 T Flour
    3 ½ oz dry White Wine
    10 oz Chicken Stock
    4 T Marsala or Madeira
    Salt & Pepper

    Recipe



    Melt Butter and fry the Mushrooms and Bacon until they are slightly browned. Sprinkle on the Flour, mix well and cook for another minute.
    Add the Wine and Stock and bring everything to the boil, stirring all the time. Lower the heat and simmer for about 15 minutes more, stirring from time to time to prevent sticking.
    Add the Marsala or Madeira, season and cook for another 2 minutes.
    Wonderful served with Chicken Breasts, Pork Chops, Pork Tenderloin or Grilled Steak.
    Serves 4
