Baked Potato Soup
List of Ingredients
2/3 C butter
2/3 C flour
7 C milk
4 large or 6 medium baked potatoes, cooled, peeled & cubed
12 strips bacon cooked and crumbled
1 1/4 C shredded cheddar cheese
1 C sour cream
3/4 t salt
1/2 t pepper
4 or 5 green onions sliced
Recipe
In dutch oven melt butter, stir in flour. Heat and stir until smooth. Gradually add milk stirring constantly until thickened. Add potatoes and onions. Bring to a boil, stirring constantly. Reduce heat, simmer 10 minutes. Add remaining ingredients, stir until cheese melts. Serve immediately.
Optional: Garnish each serving with cheese, bacon and green onions.
