Basic Vegetable Soup
List of Ingredients
1/4 C each: diced carrots, diced onions
1/2 C each: diced celery, chopped cabbage, peeled, diced potatoes
salt and pepper to taste
1 C canned diced tomatoes
1 T chopped parsley
l t basil
2 T butter
3 C beef stock
Recipe
In heavy three-quart saucepan, saute in butter: onion, carrots and celery. Add tomatoes, beef stock and basil. Bring to a boil. Add cabbage and potatoes; simmer for 30 minutes. Remove from heat. Add parsley, salt and pepper to taste.
