    Basque Soup

    List of Ingredients

    1 # Italian Sausage, sliced
    1/2 C Onion, chopped
    2 Cans Tomatoes (1# each)
    4 Potatoes, diced (to equal 6C)
    1/4 C Chopped Parsley
    1 C Celery, diagonally sliced
    2 T Celery Leaves
    1 1/2 C Water
    2 Beef Bouillon Cubes
    1 Bay (Laurel) Leaf
    1 t Salt, or to taste
    1/2 t Lemon Juice

    Recipe

    In a large vessel or stockpot, brown Sausage over medium heat. Add Onion and cook 5 minutes. Add remaining ingredients and bring to boil.
    Reduce heat, simmer, uncovered 40 minutes or until Potatoes are tender. Remove Bay Leaf and serve.
    Serves 6 generously.
    Serving Suggestion: A loaf of homemade (crusty French) Bread, a hunk of good Cheese, some crisp Grapes and thou for an easy stick-to-the-ribs meal on a bone-chilling winter night.
