Creme Marquise
List of Ingredients
4 oz Onion, chopped
4 oz Leeks, chopped
5 oz Butter
5 oz Flour
2 1/2 qts Chicken Stock
1 # Boston Lettuce
1 C Milk
1/2 C Cream
4 oz cooked shredded Lettuce
1/2 C cooked Rice
Recipe
In a soup pot, cook the onions, leeks in the butter for 5 minutes. Whisk in the flour and cook for 5 minutes. Add the chicken stock and the lettuce. Stir to blend well.
Cover and simmer until lettuce is cooked.
Pur�e soup in a blender and strain.
Stir in the milk and cream. Heat in a double boiler. Before serving add the cooked and shredded lettuce and rice.
Serves 6.
