List of Ingredients
6 C water
1 head of escarole, washed well & cut in bite size pieces
1 C sliced carrots
2 packages chicken-flavored ramen noodles
1 can (16 oz.) kidney beansRecipe
Boil escarole and carrots in a large pot. Reduce heat, cover and simmer 5 minutes until carrots are crisp-tender. Add packages of ramen noodles and seasoning packets, and can of kidney beans. Cover and simmer 4 minutes until noodles are tender. Stir in 2T grated cheese.
Serve with crusty bread.
