This is basic farmhouse food...nutritious, rib-stickin' and hearty.
List of Ingredients
1 # Dried Great Northern Beans
Meaty Ham Bone or Smoked Ham Hocks
Water
Large Onion,chopped
Several Celery ribs with leaves,coarsely chopped
Several Carrots, coarsely chopped
Garlic, minced or Garlic Powder, to taste
Salt, to taste
Freshly ground Pepper, to taste
1-2 Chicken Bouillon Cubes
Recipe
Wash and pick over dried beans; soak overnight with water to cover. Drain and rinse. Cover with amount of water that you ultimately want as soup.
Bring to boil. Add ham bone/hock and remaining ingredients.
Simmer until all ingredients are tender and soup is thickened (about 2 hours). Taste and adjust seasoning.
Serve with cornbread on a cold winter night.
If you wish this thicker, mash with potato masher slightly after beans are tender.
You can also add drained, diced peeled tomatoes to this for some color.
