Manhattan Clam Chowder
List of Ingredients
1 Medium Yellow Onion, peeled and minced
2 T Butter or Bacon drippings
1 1/2 C Diced, peeled Carrots
1/2 C Diced Celery
2 C Diced, peeled Potatoes
1 (1 # 12 oz) Can Tomatoes, do not drain
2 C Water
1 1/2 t Salt
1/8 t Pepper
1/2 t Oregano or Thyme
1 pt Minced fresh or canned Clams, drained, reserve liquid
Drained Clam liquid plus enough bottled Clam Juice to total 1 pt
1 T Minced Parsley
Recipe
Stir fry Onion in Butter in large heavy kettle over moderate heat 5 to 8 minutes until pale golden. Add remaining Vegetables,(breaking up Tomatoes), Water, Oregano or Thyme, Salt and Pepper. Cover and simmer 15 minutes. Remove from heat and add clams and liquid, cover and let stand 1/2 hour to blend flavors. Return to heat and simmer about 5 minutes, sprinkle with Parsley. Serve piping hot with Oyster Crackers.
