    Sausage Soup with Bowties

    List of Ingredients




    1/2 # Dried White Pea Beans
    3 Qts Chicken Broth
    3 T Olive Oil
    4 Links Italian Sausage (Mild or Sweet)
    3 Potatoes, peeled and diced
    1 Carrot, chopped
    1 small White Onion, chopped
    1 Rib Celery, chopped
    4 Ripe Tomatoes, peeled and diced
    1 1/2 t Salt
    Milled Black Pepper
    1/2 C small bowtie pasta

    Recipe



    Soak Beans in Water 3 hrs; drain.
    Cover Beans with Broth and simmer 1 1/2 hrs or until Beans are almost tender, but still firm.
    Heat Oil in large saucepan; add Sausages, pricked with a fork, and brown. Stir in Potatoes, Carrot, Onion, Celery and Tomatoes; sprinkle with Salt and Pepper.
    Simmer for 15 minutes, then stir in remaining Broth and simmer, uncovered for 20 minutes. Add this to the bean pot, stirring well.
    Cook Bowtie pasta until tender, drain and add to bean pot. Heat 5 minutes.
    Serve piping hot. Serves 4-6
