Boil the shrimp shells in salted water for about 20 minutes, and many include chopped aromatics such as celery, carrots, onions, and a bay leaf or two. Or, saute the shrimp shells in a dry skillet over moderate heat until they become lightly browned and fragrant, about 15 to 20 minutes, before adding them to the boiling water. For an extra punch of flavor, puree the stock with the shells before straining it through several layers of cheesecloth or a coffee filter.
