White Bean & Pasta Soup

1 small onion; finely chopped
4 T extra virgin olive oil
4 cloves garlic; minced
30 oz canned Italian tomatoes
10 fresh basil leaves; chopped
1/4 C chopped parsley
45 oz canned canellini beans; undrained
5 C water
4 oz dried pasta
Recipe
In stock pot, saute onion in oil until soft. Add garlic; saute 1 minute. Add tomatoes, basil and parsley. Cook over medium heat 10-15 minutes. Add water and beans; heat 15-20 minutes. Add pasta; simmer 10 minutes. Season with salt and pepper as desired. Serve with additional extra virgin olive oil for drizzling over the soup, if desired.
