In a saucepan, cook Apricots just barely covered with water, until tender and most of the water is absorbed. Drain. Cool to room temperature. Puree in blender. Stir in Honey.
Pack in sterile jars.
Will keep 2-3 months in refrigerator.
Yield: 6 one half cup jars or 3 1 cup jars.
For Gingered Honey: Add 1 T julienned fresh ginger to a 1 quart jar of Honey. Heat on low 10 minutes. Let stand 2 hours before pouring into jars.
