Hummus
List of Ingredients
6 oz Dried chickpeas
1 pt Water
3 T Lemon Juice
2 oz Olive Oil
2 cloves Garlic, crushed
2 T Water, extra
½ t Salt
Paprika to garnish
Recipe
Soak Chickpeas in the 1 pt Water overnight. Drain and put them in a pan, adding water and bring to the boil. Simmer uncovered for about 1 hour, or until they are tender. Drain and rinse under cold water.
Place the Chickpeas, Lemon Juice, Olive Oil, Garlic, 2T Water and Salt in a blender or food processor and blend until smooth.
Empty the hummus into a large dish and sprinkle with Paprika. Serve with warm Pita Bread wedges.
