According to information from the Northarvest Bean Growers, it is a common myth that adding soda prevents intestinal gas, but adding soda will destroy valuable B vitamins.
Their suggestion? Use the following
Preferred Hot Soak method:
Add 10 cups of cold water to the pot for each
pound of beans prepared. Bring the water to a boil,boil for 2-3 minutes.
Cover the pot. Let stand; a 4-hour soak is ideal, but beans may be soaked from 1 to 24 hours. Finally, drain and rinse soaked beans. Add fresh cold water to fully cover beans (plus, if you wish, 1-2 tablespoons oil and 1-2 teaspoons salt). Simmer the beans until they're tender. Serve them plain, or follow a favorite recipe for a dish your family will love.
