Quick Defatting Method

Allow the liquid to cool just slightly and then place it in a
large, heavy-duty zipper-lock bag. Seal the bag and allow time
enough for the fat to rise to the surface of the liquid.
Hold the bag by one of the top corners and cut off the point
of one of the bottom corners to act as a spout. As soon as the
liquid is drained, pinch the spout to capture the fat in the bag.
Toss the bag with the remaining fat.
