Separate 2 heads of garlic into cloves, cover them with water in a small bowl and leave on your counter top a couple of days, or several days if you change the water. The skins will slip off easily, then store in a dry tightly-covered glass bowl in the refrigerator where they'll last several weeks. The convenience is wonderful. You can pick the size clove you need, and it's ready for chopping. No more paper hulls sticking to damp fingers.
If a clove develops roots and a stem while soaking, simply stick it in the ground and you'll have plenty of garlic growing in your garden, too!
